Passion Fruit Posset
- 2 lemons (juice only)
- 2 passion fruit
- 100 ml double cream
- 40 g caster sugar
- 1/2 mango (diced)
- Fresh mint
- Place cream & sugar into a small pot and bring to a gentle boil.
- Lower the heat; now add lemon and 1/2 passion fruit & stir gently.
- Place in tall glass & chill for 2 hours.
- Serve with mango, passion fruit & mint on top.
