Hand Chopped Rustic Pesto and Flat Bread

Ingredients:

  • 1 sml bunch Basil
  • 10 g Parmesan
  • 1 clove of Garlic
  • 10g Pine nuts, toasted
  • 10 ml Extra virgin olive oil
  • 7 ml Walnut oil
  • Maldon salt

 

Method:

  • Grate Parmesan, garlic into a mixing bowl.
  • Chop toasted pine nuts, add to bowl now add walnut oil.
  • Finely chop basil add to bowl and extra virgin olive oil, season with Maldon salt.

 

Flat bread:

  • 400g (oo flour)
  • 7g instant yeast
  • Pinch of salt
  • 1 tsp of caster sugar
  • 325 ml lukewarm water
  • 2 tbsp extra virgin olive oil
  • Rosemary

 

Method:

  • Mix flour, yeast & salt together well.
  • In a jug mix water yeast & sugar
  • Gentle add oil & water, cover for 1 hr to rise.
  • Knock back add chopped rosemary, place on baking tray for 20 minutes and rise.
  • Bake @190c 10-15 minutes.
